Eggplants are generally not everyone’s favorite vegetable, but especially the little ones. However, you can change his mind by preparing these tasty aubergine rolls. Light, healthy, tender and rich in flavor, they are a side dish that deserves to be served on the table for lunch or dinner.

2 large aubergines (about 20 slices)
150 g of rice
200 ml of tomato puree
1 carrot, peeled and cut into cubes
1 green spring onion, sliced
1 stalk of celery, diced
1 clove of garlic, chopped
3-4 tablespoons of extra virgin olive oil
Just enough hot water
100 g of shredded cheese (also light galbanino)
A tablespoon of grated parmesan
Salt and pepper to taste
A few basil leaves
Concentrate on the steps to follow exactly to prepare the aubergine rolls
Start by cutting the aubergines into slices about half a centimeter thick.
Place them on a cutting board, then sprinkle them with salt and let them rest for 15 minutes.
Pour a drizzle of oil into a non-stick pan and brown the diced carrot, diced celery, chopped garlic clove and sliced onion for a few minutes.
Once the aubergines have rested, dry them with absorbent paper.
Place them on a baking tray lined with special paper, pepper them to taste and season them with olive oil.
Cook them in a preheated oven at 200°C for 15 minutes.
In a pan add salt, pepper and rice.
Mix well.
Add 200 ml of tomato sauce, mix, then add the hot water little by little.
Cook, stirring occasionally, until the rice is cooked. Then season with salt and pepper, then turn off the heat.
Add a drizzle of oil, the cheese cut into pieces and a little grated parmesan to the pan.
Stir to melt the cheeses well.
Once this step has been completed, take the aubergine slices and place a spoonful of freshly made rice topping on each one.
Roll up the slices and place the rolls in a previously oiled baking dish and lightly covered with tomato sauce.
Finally, garnish the surface of the rolls with a little tomato sauce and sprinkle them with a pinch of grated parmesan.
Bake in a preheated oven at 180°C for about 10 minutes.
Let cool slightly and serve your aubergine rolls with a few basil leaves!
