Salmon spaghetti a la Carbonara


Ingredients :

  • 300 g of pasta (spaghetti)
  • 100 g salmon, smoked (fillet or steaks)
  • 1 onion(s).
  • 200 g of cream
  • 2 eggs
  • 2 cloves of garlic
  • 3 tablespoons of parmesan
  • salt and pepper
  • oil (neutral)

Preparation :

Cook the spaghetti as usual.

Dice the onions as finely as possible and the salmon (don’t skimp on quality) into small pieces. Peel the garlic and chop it as finely as possible (of course you can also use a garlic press, but personally I prefer to chop it). Fry the onions in the oil until translucent, briefly fry half the garlic and the salmon and quickly remove from the heat again.

Mix the cream, eggs, parmesan (preferably old and freshly grated), the other half of the garlic and the spices in a cup.

Drain the finished spaghetti and quickly return it to the pot. Now pour the egg and cream mixture and mix it with the spaghetti. If the egg does not begin to set due to the residual heat from the pan and pasta, return to the stovetop for a short time. Finally, mix in the salmon and onions.
