ingredients
1 clove of garlic
1 stalk of celery
4 carrots
2 tomatoes (large)
1 onion
200 g of dried chickpeas
1 sprig of rosemary
1 sprig of thyme
Olive oil
Pepper
Salt

How to prepare lentil and carrot soup?
The day before, soak the legumes in a bowl full of water.

Leave to rest overnight.

Clean the vegetables and chop them finely.

Cut 2 carrots into small pieces.

Brown all the vegetables in a pan with the chopped aromatic herbs and a drizzle of oil.

Add the chickpeas and tomato pieces.

Add water and cook for an hour.

Season with salt, pepper and serve the carrot and lentil soup.
