ingredients
2 red onions
30 g of grated parmesan
50 g of breadcrumbs
1 egg
80 g of light cheese
15 cl of water
20 cl of tomato puree
350 g of lean minced meat
1 aubergine
Salt
Pepper
Sweet paprika
3 cl of olive oil
1 clove of garlic
5 g of coriander
5 g of ginger

Preparation
How to prepare aubergine rolls with meatballs and tomato sauce?
Preheat the oven to 180 degrees.

Wash the aubergines and cut them into 5 mm slices.

In a bowl, mix a drizzle of oil with salt, pepper and paprika.

Arrange the aubergines on a baking tray lined with baking paper.

Brush them with spicy oil and bake for about 25 minutes.

Peel and chop the onions.

Place the minced meat in a bowl.

Add an onion, breadcrumbs, salt, egg, breadcrumbs, chopped coriander, ginger and parsley.

Give the meatballs an oval shape.

Cook them with a drizzle of oil in a non-stick pan.

Let the aubergines cool.

Place a meatball at one end and roll the aubergine slices on themselves.

Peel and mince the garlic.

Brown it with the remaining onion in a non-stick pan with a drizzle of oil.

Add the tomato sauce, salt and pepper.

Pour in the water and cook covered for ten minutes.

Remove 2 ladles of sauce.

Add the chopped parsley to the pan and place the aubergine rolls on top.

Cover them with the sauce.

Sprinkle with grated Parmesan and light cheese.

Cook covered for ten minutes.
