For the base:
4 eggs
100 g of cake flour
½ teaspoon of vinegar
80 g of warm milk
100 g of sugar
1 teaspoon of vanilla extract
½ teaspoon of baking powder
40 g of vegetable oil
20 g of bitter cocoa powder
¼ teaspoon salt
To moisten the sponge cake:
80 g of whole milk
1 tablespoon of bitter cocoa powder
100 g of liquid crème fraîche
80 g of sweetened condensed milk
For the cream:
20 g of melted chocolate
250 g of liquid crème fraîche
1 teaspoon of bitter cocoa powder
50 g of condensed milk
Preparation
How to make a chocolate mousse cake?
Prepare the base or sponge cake
Dissolve the cocoa in the hot milk.
Break the eggs, separating the whites from the yolks.
Blend them with the sugar.
Pour in the oil and blend again.
Add this mixture to the previous one.
Vanilla flavour.
Whisk everything together.
Sift the flour and yeast.
Add them to the mixture, seasoning with salt.
Cover with cling film and leave to rest for a few moments.
Beat the egg whites with a mixer.
Add the vinegar while continuing to beat.
Gradually pour in the sugar and beat on low speed for 30 seconds.
Incorporate this preparation into the previous one, mixing delicately from top to bottom.
Line an 8cm square mold with baking paper.
Pour in the mixture and cook for about 25 minutes.
Let cool.
Prepare the mixture that will be used to soak the cake.
Mix the cocoa with the condensed milk in a bowl.
Then add the cream and whole milk.
Mix well.
Turn the base over and put it back in the mold.
Prick it with a toothpick.
Pour the prepared mixture over it.
Cover with cling film and leave to rest for an hour.
Make the chocolate mousse
Mix the condensed milk with the melted chocolate and cocoa with a spatula.
Gradually add the cream, continuing to mix.
Mix everything with the mixer until you get the right consistency.
Spread this mixture on the surface of the cake
Place the chocolate mousse cake in the refrigerator for an hour before serving.
