400 g of peeled tomatoes
200 g of grated lean mozzarella
3 aubergines
Pepper
Salt
1 teaspoon of Provence herbs
2 cloves of garlic

How to make aubergine gratin?

Wash the aubergines, slice them thinly, add salt and pepper.

Cook the tomatoes for 8 minutes in a pan with the chopped herbs and garlic, salt and pepper.

Preheat the oven to 180 degrees.

Spread some tomato sauce in a baking dish.

Add a layer of aubergines and more tomato sauce.

Sprinkle with grated cheese.

Proceed in this way with the rest of the ingredients, ending with the mozzarella.

Cook for 40 minutes.

Serve the aubergines au gratin.
