ingredients
1 onion
1 pepper
2 cloves of garlic
70 g of grated light mozzarella
250 g of tomatoes
2 aubergines
Salt
Pepper
Paprika
Herbs
Parsley
Olive oil

How to prepare fried aubergines with tomato sauce, peppers and mozzarella?

Preheat the oven to 180 degrees.

Wash the aubergines and cut them into cubes.

Place them on a baking tray lined with baking paper.

Drizzle them with a drizzle of oil.

Cook for a quarter of an hour.

Clean the pepper and cut it into pieces.

Peel and chop the garlic with the aromatic herbs.

Wash the tomatoes and crush them.

Peel and slice the onion.

Brown it in a non-stick pan with a drizzle of oil.

Add pepper and cook for 2 minutes.

Then add the cherry tomatoes.

Add the salt and continue cooking for 5 minutes.

Stir in the garlic, aubergines, paprika and herbs.

Mix well.

Add the cheese and cook covered for 5 minutes.

Sprinkle with chopped parsley and serve the fried aubergines with tomato sauce, pepper and mozzarella.
