ingredients
- 1 kg (2 lb) boiled potatoes
- 2 egg yolks
- ½ teaspoon nutmeg
- Salt and pepper to taste
- 100 g (1 cup) grated Parmesan cheese
- 3 tablespoons chopped parsley
- 2 eggs
- breadcrumbs to cover
- 1 block of mozzarella
Preparation
- Peel and mash the cooked potatoes.
- Mix the mashed potatoes with salt, pepper, nutmeg, egg yolks and parmesan.
- Cut the cheese into rectangles.
Take a few spoonfuls of mashed potatoes and form a pie, wrap it around the cheese making sure it is completely covered. - Beat 2 eggs and cover each potato pancake with the egg and breadcrumbs.
- Fry for 6-7 minutes or until evenly browned.
