Instructions:

Step 1: Preparation of the Beans

  1. Washing and Soaking:
    • Wash the beans in cold water. Soak them in water overnight or use the quick soak method following package directions.
  2. Cooking the Beans:
    • In a large pot, cook the beans with enough water until tender. This can take 1 to 2 hours, depending on the type of beans. Drain and reserve.

Step 2: Preparation of the Soup

  1. Stir-fry:
    • In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, garlic and green pepper. Cook until the vegetables are tender.
  2. Add Tomatoes:
    • Add the crushed tomatoes and cook for a few minutes until the mixture looks more homogeneous.
  3. Spices:
    • Add bay leaf, cumin, oregano and paprika. Stir to mix the spices with the vegetables.
  4. Add Cooked Beans:
