Homemade lemon jam
Homemade lemon jam is a delicious sweet preparation made with lemons. It is usually prepared by simmering lemons with sugar to obtain a thick, creamy consistency. Here is a simple recipe for making homemade lemon jam:
Ingredients :
4 untreated lemons (organic if possible, to avoid pesticide residues)
400 g of granulated sugar (you can adjust the amount of sugar according to your taste)
250 ml of water
Instructions:
Wash the lemons thoroughly in hot water to remove any dirt or wax. Wipe them with a clean cloth.
Finely grate the zest of the lemons, avoiding removing the white part, as it can give a bitter taste to the jam.
Cut the lemons in half and squeeze them to extract the juice. Remove any anomalies that may be present.
Place the grated lemon zest, lemon juice and water in a thick-bottomed saucepan.
Heat the mixture over medium heat and bring it to a boil. Then reduce the heat to low and simmer for about 15 minutes so that the lemon zest softens.
Add the granulated sugar to the pan and stir until completely dissolved.
Raise the heat slightly to bring the mixture to the boil. Once boiling, cook over medium heat for about 20-25 minutes, stirring occasionally to prevent the bottom from sticking.
To check the consistency of the jam, do the cold plate test: put a small amount of jam on a cold plate, if it thickens quickly it is ready. Otherwise, continue cooking for a few more minutes.
Once the jam has reached the desired consistency, remove it from the heat and let it cool slightly.
Pour the still hot jam into previously sterilized glass jars and close them hermetically.
Let the jars cool completely before storing them in a cool, dry place.
