1 glass of natural mineral water
1 glass of flour
1 teaspoon of sugar
Pitted black olives
12.5 g of fresh brewer’s yeast
Olive oil
Rosemary
½ teaspoon of fine salt

How to make rosemary and olive focaccia?
Crumble the yeast and dissolve it in a glass of warm water with a little sugar.
Place the flour in the bowl of the food processor fitted with the hook attachment.
Add the oil and salt.
Mix everything at minimum speed.
Increase the speed of the robot and gradually add the sourdough.
Continue kneading for 5 minutes.
Remove the hook, cover the dough and let it rise for an hour and a half in the oven with the light on.
Oil a baking tray and spread the dough on it with your fingers.
Cover it and let it rise for another half hour as before.
Preheat the oven to 220 degrees.
Garnish the dough with chopped rosemary and olive slices.
