8 tomatoes
3 slices of bread
1 oval black aubergine
1 clove of garlic
Olive oil

How to make mini aubergine pizzas?

Preheat the fan oven to 180°C.

Wash the tomatoes and dry them, then cut them into small pieces.

Mix them with the bread, basil, oregano, a drizzle of oil, salt and pepper.

Wash the aubergines, dry them and cut them into 5 mm slices.

Place them in a large baking dish.

Brush them with oil and garnish them with the mixture.

Cook for a quarter of an hour.

Thinly slice the cheese and arrange it on the aubergines.

Sprinkle with oregano and put back in the oven for a few minutes.
