Wash the aubergines, peel them and cut them into cubes.

Cook them for 35 minutes in boiling salted water and vinegar.

Drain and mash them, eliminating the vegetation water.

You need to get half a kilo of cooked aubergines.

Mix them with the dried tomatoes, eggs, breadcrumbs, parmesan and basil.

Let the mixture rest for 10 minutes.

Form aubergine meatballs with the dried tomatoes.

Cook them in a non-stick pan with a drizzle of oil.
