How to make crispy chips


French fries ? Undoubtedly the dish that pleases everyone, young and old. But to do this you need to know how to prepare them according to the rules of the art. First of all, it is important to choose potatoes with floury pulp (Bintje, Agria, Caesar, Marabel, etc.). If you’re a frying purist, you can imitate the Belgians and use beef fat instead of vegetable oil.

  • Potatoes 1kg
  • Sunflower seed oil c/n
  • Cold water c/n
  • White vinegar 2 tbsp

Preparation

  1. Peel the potatoes and cut them into sticks about 1 cm thick (you can leave them with the peel but you must wash them very well).
  2. Place the cut potatoes in a large container and pour water to cover them.
  3. Add the two tablespoons of vinegar and mix a little.
  4. Leave to rest in the refrigerator for at least 20 minutes. An hour would be ideal.
  5. Remove the potatoes from the water and dry them as much as possible (you can use a cloth or napkins).
  6. Heat the oil in a pot or pan suitable for frying.
  7. Fry the potatoes in as many portions as necessary.
  8. Enjoy the crispiest potatoes of all!

  • 1 kg tomato (even crushed or common tomato)
  • 1 onion
  • 1 clove of garlic
  • 2 tablespoons honey
  • 1 teaspoon powdered ginger
  • 1 teaspoon ground cloves
  • 2 teaspoons of ground cinnamon
  • 1 tablespoon white vinegar
  • 2 tablespoons mascabo (or brown sugar)
  • Salt c/n
  • Pepe c/n

Preparation

  1. Finely chop the onion
  2. Cut the cherry tomatoes into cubes (if whole).
  3. Chop the garlic.
  4. Put everything in a blender and blend until the ingredients are no longer identifiable.
  5. Pour the contents into a saucepan and cook over medium heat.
  6. When the mixture begins to boil, add all the other ingredients.
  7. Cook until the sauce is reduced and slightly thicker.
  8. Ready, you already have delicious homemade ketchup!

With these quantities you will certainly have some ketchup that you can package in previously sterilized glass jars. This way you will have ketchup for the next time you decide to make french fries.

To eliminate any type of bacteria from the jars it is necessary to boil them for 10 minutes (with the lid) and then spray the inside with alcohol. Then all you have to do is fill them with the sauce you have left. Remember to keep the filled jars in the refrigerator.
