grated Parmesan onion
30 cl of tomato puree
2 aubergines
6 cherry tomatoes
2 cloves of garlic
300 g of tagliatelle
Pepper
Parsley
Olive oil

Wash the cherry tomatoes and aubergines, then cut them into cubes.

Peel and chop the onion and garlic.

Brown them in a large pan with a drizzle of oil.

Add the cherry tomatoes and aubergines.

Continue cooking for a quarter of an hour.

Salt and pepper.

Cook the tagliatelle following the directions on the package.

Drain them and add them to the other ingredients.

Leave to cook for a few minutes.

Sprinkle with grated parmesan and chopped parsley.
