The first thing you should pay attention to to put the Chinese method into practice and  obtain excellent results is to use fresh fruit in good condition.  Therefore, the fruit must  be healthy and not rotten,  otherwise you will not get the desired results.

The fruit should be washed by placing it in a saucepan and running water. Wash it several times to remove any residue and drain it carefully.

Take into account a large amount of fruit to be preserved  and carry out the Chinese method for its preservation in detail, following the procedure indicated below step by step.

What is needed to perform the Chinese method?

In addition to the fruit, which you can choose from several types, such as apples, cherries, grapes, plums, peaches and much more, you will need to get  some 1 and a half liter glass jars  . Calculate the amount of fruit you want to preserve with this method and obtain the necessary jars.

You can choose to mix the fruit in a jar, but the advice is to put the fruit by type. As  for the cherries, remove the stem and place only the cherries inside the jar  . The following explains what to do to carry out the correct conservation procedure.

The Chinese method of preserving fruit.

As mentioned above,  you can choose different types of fruit,  but it is advisable to choose fruits that are not too large so that more can fit in the containers. This is what you should do:

  • Boil the water, choosing the amount needed to fill the jars.
  • Remove the leaves and peduncles (or petioles) from the fruit, wash it well
  • Place the fruit in the jars and fill them to the top.
  • Pour the boiling water over the top, without reaching the edge of the jar.
  • Place the lids, without screwing them on, and let it sit for 10 minutes.

Once the time has passed,  we remove the cap and put a plastic one with holes. Pour the water into the pot and return to a boil.

How to complete the procedure

While the water returns to a boil, pour 2 heaping tablespoons of sugar into each glass jar filled with fruit.  Once the water has come to a boil, pour it back over the fruit, scooping it up with a ladle to prevent splashing.

Fill the jars to cover the fruit, but not to the top. Replace the jar lids and screw them on tightly with the sealing tool. At this point, she grabs two towels, uses one to place the jars on and the other to cover them.

Let the jars cool for 24 hours at room temperature  . Once you have finished the procedure, the jars will be ready to be stored for a long time.

Place them at a temperature no higher than 18°, in a dry place away from light. The fruit will keep perfectly for twelve months and therefore  for a year you can eat as much fresh fruit as you want, without having to buy it.  A great saving, if we take into account what fresh fruit costs. The jar, once opened, should be emptied within a few days!
