The eye of the round, a moderately appreciated piece of meat

Located in the round, the part which includes the thigh and buttock of the beef,  the eye of the round is a so-called economical piece of meat  and above all renowned for being particularly lean and moderately tender. Which de facto makes this piece of meat less tasty.

Even though it strongly resembles a fillet, the eye of round is much harder and less melting in the mouth. It is usually offered  in the form of steaks or roasts, but can also be used to prepare different stews. Furthermore, some butchers recommend using this piece of meat to make tartares.

How to successfully cook your meat?

If you want to enjoy meat-based dishes, it is necessary, even essential, to cook it successfully. In order to obtain meat that is both tender and juicy, here are the basic steps to follow.

  • Choosing the right cut of meat

Respecting the cooking time will be of no use if you do not choose the right piece of meat. So this is the first thing to take into consideration. What should definitely catch your attention when choosing your piece of meat is its color. The latter should have a luminous appearance. In other words, it should appear red and shiny. Furthermore,  the marbling of the meat is an indicator of quality . Indeed, during cooking, the fat that composes it will melt, making the meat more tender, juicier and above all more flavorful.

  • Prepare the meat before cooking

Once you have decided on your piece of meat, you will need to consider its preparation. This is the last step before cooking. The goal is to tenderize the meat as much as possible. For this, you can opt for a milk marinade. In fact,  the acidity of the milk makes the meat less firm  without altering its taste. Otherwise, you can also take your meat out of the refrigerator, 30 minutes before starting its preparation. This way, it will have time to relax before cooking, which will allow you to obtain significantly softer meat.

  • Opt for the correct cooking of meat

There are several ways to cook a piece of meat, which means that  the cooking method should in no case be random or due to chance . So if you plan to fry your piece of meat, the cooking should be done over high heat and the meat cooked in fat so that it can retain all its flavor. In other words, if you want to roast your meat, this must be done in the oven while remembering to baste it regularly with cooking juices. Finally, if you prefer a healthy cooking method, you can consider steaming your meat. This will preserve the aroma as well as the nutritional benefits of the meat.

However, although meat is nutritionally interesting, you should avoid consuming it in very large quantities so as not to cause health risks. For a balanced diet, alternate red meat with poultry or fish.
