How to tell if eggs are fresh

Step 1

To determine if your eggs are fresh, you need to check the air pocket. Fresh eggs have very little air pocket, whereas when they are stale there is a lot of it. To check whether the air pocket is minimal, the egg must sink into a glass full of water in a horizontal position. If the egg is not very fresh, it will tilt slightly in a semi-horizontal position at the bottom of the glass. However, if the egg is stale, when you try to make it sink it will float upright.

Step 2

Now, if eggs are cracked, the fresh egg has a fatty yolk and a gelatinous ring of white surrounding the yolk and another ring of white. When it is not so fresh, the yolk in the center seems slightly flat, the double ring is not as visible and the egg white is watery. When the egg is stale, the yolk is very flat and the white is just watery.
