Brown Sugar Glazed Carrots by Martha Stewart


Carrots are a staple in our house and one of my favorite ways to eat them is Martha Stewart’s Brown Sugar Glazed Carrots recipe on Youtube. It is an easy and classic side dish, especially on holidays, which gives a feeling of well-being at the table. What I love most about this dish is that even though it is so simple, it tastes delicious! It pairs with almost any appetizer, so it’s a great choice for a holiday banquet or large dinner. Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 2 to 3 pounds carrots tops, peeled and halved lengthwise, 1/3 cup tops roughly chopped and reserved
  • coarse salt and freshly ground black pepper
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon molasses
  • 1/4 cup grapeseed oil
  • 1 1/2 tablespoons unsalted butter
  • 1 sprig of fresh rosemary

Directions:

Step 1

To start, prepare the carrots. Peel them and cut them in half lengthwise, all the same size. Set them aside. Then, in a large skillet over medium heat, add 2 tablespoons of olive oil and the carrots. Salt and add a grind of black pepper, then mix the carrots to coat them with oil. After about three minutes, add 2 tablespoons of brown sugar, 1 tablespoon of molasses and a little water to prevent the sugar from sticking. Continue cooking until the carrots are tender and the sauce is thick.

Step 2

While the carrots are cooking, add 1 sprig of fresh rosemary and a pat of butter. Stir and, once the butter has melted, remove them from the pan and transfer them to a serving plate. Serve and enjoy!
