WW Russian Salad


Russian salad, also known as Olivier salad, is a classic dish that was created in Russia in the 19th century. It is often prepared with vegetables, potatoes, hard-boiled eggs, chicken or ham, and mayonnaise. Ingredients 

  • 2 cups cooked and diced potatoes
  • 2 cups cooked and diced carrots
  • 1 cup cooked peas
  • 1 cup diced cucumber
  • 1/2 cup chopped green onions
  • 2 tablespoons of light mayonnaise
  • 2 tablespoons low-fat Greek yogurt
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of cider vinegar
  • Salt and freshly ground black pepper, to taste

Preparation

  1. In a large bowl, combine the potatoes, carrots, peas, cucumber and green onions.
  2. In a small bowl, combine mayonnaise, Greek yogurt, Dijon mustard, cider vinegar, salt and pepper.
  3. Add the salad dressing and mix well.
