Chess Chicken

Chicken Chess

Ingredients:

For the Chicken:

  • 500 g chicken breasts, cut into cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 teaspoon cornstarch
  • 1 egg, beaten
  • Vegetable oil for frying

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons ketchup
  • 1 spoon of sugar
  • 1 teaspoon cornstarch dissolved in 2 tablespoons water

For the Vegetables:

  • 1 red bell pepper, cut into cubes
  • 1 green pepper, cut into cubes
  • 1 cup water chestnuts, cut into halves
  • 1 cup broccoli, cut into florets

Instructions:

Step 1: Marinate the Chicken

  1. In a bowl, mix the chicken cubes with the soy sauce, rice wine, cornstarch and beaten egg. Make sure the chicken is well coated. Marinate for at least 20 minutes.

Step 2: Fry the Chicken

  1. Heat enough oil in a large skillet or wok over medium-high heat.
  2. Fry the marinated chicken pieces until golden brown and cooked through. Remove the chicken from the pan and place it on kitchen paper to drain excess oil.

Step 3: Prepare the Vegetables

  1. In the same pan, add a little more oil if necessary. Sauté red and green bell peppers, water chestnuts, and broccoli until tender but still crisp.

Step 4: Prepare the Sauce

  1. In a small bowl, mix all the ingredients for the sauce: soy sauce, rice vinegar, ketchup, sugar and cornstarch dissolved in water.
  2. Pour the sauce over the sautéed vegetables and mix well.

Step 5: Combine and Serve

  1. Add the fried chicken pieces to the pan with the vegetables and sauce. Stir so that everything is well coated and heated evenly.
  2. Cook for a few additional minutes until the sauce thickens slightly.

Step 6: Serve and Enjoy

  1. Serve Chess Chicken hot over white rice or Chinese noodles.
  2. Optional: Garnish with chopped scallion or sesame seeds for an extra touch of flavor.
  3. Ready to enjoy your delicious Chess Chicken!
