However, you can change his mind by preparing these tasty aubergine rolls. Light, healthy, tender and rich in flavor, they are a side dish that deserves to be served on the table for lunch or dinner.<\/p>\n\n\n\n<p>Generously stuffed aubergine rolls: everyone will like them.<br>Preparation time: 20 minutes<\/p>\n\n\n\n<p>Cooking time: 40 minutes<\/p>\n\n\n\n<p>Rest time: 15 minutes<\/p>\n\n\n\n<p>Servings: for 20 sandwiches<\/p>\n\n\n\n<p>Discover the list of essential ingredients for the preparation of this recipe<br>2 large aubergines (about 20 slices)<br>150 g of rice<br>200 ml of tomato puree<br>1 carrot, peeled and cut into cubes<br>1 green spring onion, sliced<br>\u200b\u200b1 stalk of celery, diced<br>1 clove of garlic, chopped<br>3-4 tablespoons of extra virgin olive oil<br>Just enough hot water<br>100 g of shredded cheese (also light galbanino)<br>A tablespoon of grated parmesan<br>Salt and pepper to taste<br>A few basil leaves<br>Concentrate on the steps to follow exactly to prepare the aubergine rolls<br>Start by cutting the aubergines into slices about half a centimeter thick.<br>Place them on a cutting board, then sprinkle them with salt and let them rest for 15 minutes.<br>Pour a drizzle of oil into a non-stick pan and brown the diced carrot, diced celery, chopped garlic clove and sliced \u200b\u200bonion for a few minutes.<br>Once the aubergines have rested, dry them with absorbent paper.<br>Place them on a baking tray lined with special paper, pepper them to taste and season them with olive oil.<br>Cook them in a preheated oven at 200\u00b0C for 15 minutes.<br>In a pan add salt, pepper and rice.<br>Mix well.<br>Add 200 ml of tomato sauce, mix, then add the hot water little by little.<br>Cook, stirring occasionally, until the rice is cooked.
